Mixed greens
Hard boiled egg
Chickpeas
Edamame
Pickled beets
Avocado
And some type of vinaigrette or occasionally Thai sesame dressing

Second leaf of choice
Shredded beet
Grilled chicken from the bbq, marinated or brushed in the dressing before grilling.

Dressing:
Fresh basil
Crushed roasted garlic
Quality olive oil
Balsamic vinegar
Salt
Pepper
Blend

Ps my lovely makes a mango and cilantro thing. Might be more like a chunky salsa, but I can eat it straight from the bowl

You should try my wife's tater salad, made like her Ma did it.

She uses MASHED potatoes and Kraft sandwich spread instead of mustard. That's like putting a straight bar on a muscle bike!
