I've been working on this Schwinn Corvette this winter I have the original s7 rims. Tires are shot. Being from Canada s7 tires are hard to find and end up costing a fortune to ship from the states. I want to replace the rims with normal 26 inch rims off an old cruiser.What tire sizes can I fit in there with the fenders.

I'm not a Schwinn expert, those rims are just weird, but thought I saw some 26x1 3/4" tires at Canadian Tire here in town recently. Might be worth a try
 
I'll bet 26 x 1.95 width would look good and fit. 26 x 1 3/4" (not 1.75) tires usually are S-7, those using a decimal are standard size. You'll have a much better selection of tires using standard rims.
 
Went with the standard rim 1.95 fit nice and I can even put a 2.135.
I put on 2.125 inch tires on my 1959 Corvette as Schwinn middleweights then used the same frame as for their full sized bikes. On other brands of middleweights 2 inch usually won’t fit in the frame. The only problem is that the standard rim and tires are a little smaller and the way they fill the fenders looks a little odd.

The 2.125’s only fit without fenders (barly) but it’s close, a 1.9 or 2.1will work if your replacing the rims.
these are Schwable Rapid Robs and are 26X2.1.
Should be some choices in that area.
