Gear Inches are the true equation. Even so, 32x16 for non-trail riding isn't that bad on those uber-fatties. I cruise around on 92+ gear inches on my town bike/taproom runner and just avoid any prolonged hills I can't get a run at. Then again, I'm a weirdo who practically lives on a bicycle...

32x16 aka 2:1 ratio on 26" wheels is a standard gearing for singlespeed MTBs 32x18 < 32x16

I'm not too familiar with NE NC rural roads, but SE NC wasn't too bad. The rural roads on the Northern CO Front Range are pretty tame. That encounter I had last week in the city limits was the first of its kind on the tallbike. People are usually too busy processing what the heck it is to act...

I thought that was part Exercycle, nice representation. As soon as I get moved, I'll be snapping up a couple of vintage Schwinn electro-forged basket cases someone is holding onto for me. One can never have too many bicycles, right?
