Yeah, I might have to do that. I'd stick with 27" but tire choices are so much better for 700c

I've been doing some research on tubular tires and I think for riding my local roads and maybe doing some trips I'd be better off rebuilding these wheels with 700c rims and go tubeless. Changing a tubular tire to repair a flat while on a ride sounds like a major pain.

I actually want to do some bare metal builds. Dress up the frames with brazing and either clear coat or linseed oil. My off-road build for this winter doesn’t need paint.

I agree with this largely. Where I run into a time crunch is when I do more than one build or if I’m trying to paint a bike. But I work outside so the weather is frequently a limiting factor. I have found myself making compromises to the build plan to finish in time for the judging. That’s...
