You have to be the master at packing them in... I have a 12x12 shed and could never fit 50 bikes in there.... must fit em in like a puzzle.....

Certainly can, however, are the original wheels bad ? an S2 is not a special size, and will fit any modern 20 x 2.125 or large 20 x 2.25,2.35,etc....... S7 front is special size, only available aftermarket as a , iirc, a Kenda ? Amazon ( Niagara Cycle ) had them I think. If the rims are good...

Not sure I agree on the muscle bikes died when stick shifts died - I actually bought a collection from a guy a few years back and he said " don't really have any Muscle Bikes, all single speeds " ... if you look at bikes posted online, here and elsewhere, MANY if not a majority are single...

unless it's a big $ concours resto, I generally take Schwinn kickstand that don't clean up to 'rider grade' and paint them - best match I have found for the cad is Eastwood, or similar, stainless steel paint used on muscle car gas tanks, has a shiney silver-grey look but not so 'painted'...

looks ok to me, hard to see with the postage stamp sized photos. Are you sure it's a 78 ? maybe 79 model year,78 build - the two tone paint bikes are 79 +. Looks like a full size stingray, so should be quite ridable... maybe taller sissy and bars like you noted, 79s did have the mid-rise bars...
