As for the over-exposed photos, set your camera to "A" for automatic exposures.
Modern digital cameras make very good decisions as to exposure settings now days.
The manual settings are important to have, but you must know what you want to achieve and how to adjust the settings to get there.
My camera is way smarter than I am, and I've been using if for 5+ years.
You could fix these in Photoshop, but that's a whole 'nutther' skill set, best to just take good exposures to begin with.
