I want to take two 26" coaster brake wheels take the guts out and shove two sealed bearings in and use them as trike wheels. Could this work?

i would say yes but most coaster wheels have one side a larger iner dia than the other. like the side the brake shoes is wider than the other. i think most are tapered inside as well.

For my BBQ trailer I used BMX front hubs. I found a matching pair of 20" BMX rims at the Independence, Mo swap for $5, I unlaced them and re-laced them in the 26" rims.

The ones I used ended up having a 10mm axle size, and sealed bearings.
