I've been using lithium grease for hubs and bearings after cleaning with brake cleaner. Is this the proper way? Are there better methods?

You are doing it just fine. Bike specific grease is nice to have. I am still working on a tub of cheap axle grease. When that is gone I may spring for something better.

Grease and chain lubing are like religion. Lots of different ways and all are correct.

Lithium is dandy, use oil on the plates when lubing old disc type coaster hubs. Most have a port for just that purpose.

Just got an old ND disc hub. Do I oil from the plug/port and then just grease the bearings?

no I just meant grease the bearings, oil the disc, assemble and then a couple of extra drops in the oil port.
