Nice looking build so far! The cahinring/crank looks columbia to me, similar to whats on my '56. Neverming the bike though, the millenium falcon and the at-at are sweet!

Can you tell us alittle about the rim width and tires perchance?
I'm currently working on a very similar build, but no rack and only black/white. Went with 2.35" balloon whitewalls. Wondering if I should have gone with a normal wheel at the back tho, balloons can be hard to pedal when you're my size.

My tires are 2.125 wide

I bought my rims on here from ind-chuckz they are 1" wide. The rear has a nexus 3 speed hub

Fresh out of the paint booth. Pretty happy with the paint. The chrome is pretty beat up. I keep telling myself this is a rider not a show bike.

Started stripping the tank today. I might straighten it out. I'm also leaning toward just repainting the the white. I know I'll dent it on my first ride I slid my chain guard on. I have decals for it. I plan on putting them on once I'm sure I have everything the way I want it

Tires are 26x 2.125 and the rimes are about 1.5" wide

It's looking great! The cranks look like the original with the pedals. Only the chain ring and the old seat look like they didn't come new with the bike. Definitely a Columbia chain wheel.
But it works well with your theme of a big Stingray. It's similar to the ones used on the fastbacks:
