I have a Sturmey/Archer front hub and it right now set for 14 gauge spokes. If I want to open these spokes holes up to .120 for 11 gauge Worksman spokes, is there anything I need to be aware of?

Make sure there will be enough meat left between the edge of the flange and the hole. You risk the hub flange failing and having your wheel come apart while riding. If there is enough material, drill it out to fit the new spokes and then take a bit one size larger and countersink the holes slightly to accommodate the spoke head.
