I found this bike as you see it in the pics, I added the tires and tubes, I'm almost sure the bars, stem, seat and pedals are after market, but the rest appears to be orig, any info will be appreciated.

Your bike is prewar and was built by the Cleveland Welding company. That frame style was in production from late 1937 through 1942 and can be dated closer by the serial number which is stamped into the bottom of the crank hanger. You are correct in your assumptions about the divide between what is original to the bike and what has been added with one further addition. The rack is from a late 50's / early 60's bike built by AMF, the company that bought the Cleveland Welding Company in 1951.

While those two look similar the second bike is a Huffman, not a Cleveland Welding. That general frame style was used by several manufacturers from about 1935 through 1938. The tubes on the Hufman frame are less smooth and have more of a kink to them. The Huffman has a correct Huffman chainguard but several other parts are incorrect on it including the chainring which is a CWC unit.

Cool bike, I have one very similar. It's missing the badge, but I can see the outline, has the same "upside down Roadmaster" shape yours does. (A period Roadmaster badge has crossed flags where the serrations are) Also, it's a skiptooth, but has a newer Monark sprocket on it in this pic. I need to dig it out and send Phil the serial #! ~Adam
