Here is the start of my wife's bike..Not sure which wheels to go with...

I like the red rims with the black spokes and the black/white-wall tires. It gives a great contrast to the all white bike.

That's gonna look great. I do think you need to add some color though. Rims would be a good.

Build up several sets of different colored wheels. When she gets bored with the look, swap the wheels. Any color will go with the white.

Red (or color of choice) rims, seat (or just trim on the seat), grips, anodized bits, etc. will all contrast nicely with the white. To top it off have a good pinstriper do the same color in the usual places and you'll (she) will have a tasty custom.
