Schwinn cantilever build questions

Got my hands on a sixties Typhoon frame. Plans are basic: new wheels, fat tires, dropped stem, slammed seat post, vintage seat, some low bars.

Here's my questions:

What kind of tire width can these forks and frames handle? Will a 26" Schwalbe Fat Frank or a Felt Quick Brick clear front and back (no fenders)? I found those tires online, they appear to be what I want, but no LBS has them so I have to order without testing. Would 2.125" be the right rim width?

60s typhoon would be a middle weight...you can stuff balloons in there but itll be a really tight fit(were originally designed for 26x 1 3/4" tires on s-7's)
