On an old shimano 3 speed, do like we did as kids when we tore up the shifter, put a small pebble or bolt in the shift mechanism on the axle to hold it in 2nd gear. It has an N in a circle to line it up.
On a SA, it uses a chain, so it would be more difficult to hold it in second gear, and SA has an open space between 2nd and 3rd, so it wouldn't be advisable to try to hold it in gear.
With nothing done to them, they is stuck in high gear, but that can get hard to pedal.
You could put a smaller sprocket on the crank, or a larger sprocket on the hub to get the gear ratio closer to normal, if you wanted to go to that much trouble.
