Sure you can. It may just not be as secure as a actual fixed gear hub being there isn't a lock ring. But you can still thread a gear onto the back and just use permanent loctite. Cause having a gear unthread itself while trying to stop would be an extremely bad thing. You also have to check on the thread pitch on the Campy hub to whatever gear your using. I was thinking of doing to a few wheels I have laying around.
