I've thought about the same type of thing. I'd like to have a velomobile with electric assist, thought about using a small motor as a generator to help charge batteries.
You'd be better with a flexible solar panel on the roof of the velomobile. Any generator will add drag to the drivetrain which you would be pedaling against. Solar could work whether moving or stationary.
