HELP WITH MY RAT FINK

Ok all the pros in here I need your help. Im overlauling my Rat Fink and I need help with which parts are best and where to get them at.

Springer or Stock Triple Tree Front End? Im leaning towards the Springer but if I do then really cant powder coat the Springer.

Read Tire and Wheel Combo....Want to go 24" 80mm with a white wall. What is the widest back Tire I can run?

Front Tire and Wheel Combo...Want to go 26" front just dont know how wide and what size wheel would look best?

I want to put a Sissy Bar on her as well, anyone know where I can get a sissy bar for a Rat Fink?
