I'm a big fan of satin for patina.

Gloss is awesome but you need other "bright" or conversely "dark" elements to accent it

Flat. Although there are occasions when satin can be optinal, but never gloss.

I use linseed oil cut it with thinner to lessen the shine you can actually go full sheen and work your way down.

I used high gloss on the sweetest patina in my fleet and have regretted it ever since. I'm going to attack it with steel wool this summer and knock the shine back off it.

Unless everything else is chrome to balance the shine of gloss, go satin!

You can polish satin with a good black wax and make it shine like 80 year old paint.
