They are incredible!
That's one thing my wife and I miss from living in New Mexico - the local food. I have learned to cook a lot of it but there are still a few items (tamales for example) I have not. In fact, until recently, we would have a bushel of Hatch green chilies shipped to us during harvest season for roasting, separating, and freezing in FLA to be used in future dishes.......
 
Toast, 3 fried eggs (runny yolks of course), quick fried taters (onion & garlic powder, smoked paprika, dash of cumin), curried chickpea and carrot "hash" if you will...leftovers from Thursday's dinner, originally served over rice.

And yeah, the taters got a little dark in one spot. I got distracted by not wanting to burn the toast 😂
