That's one thing my wife and I miss from living in New Mexico - the local food. I have learned to cook a lot of it but there are still a few items (tamales for example) I have not. In fact, until recently, we would have a bushel of Hatch green chilies shipped to us during harvest season for roasting, separating, and freezing in FLA to be used in future dishes.......Without the wrapper...(corn husk)...

That sounds delicious. The hash is probably amazingToast, 3 fried eggs (runny yolks of course), quick fried taters (onion & garlic powder, smoked paprika, dash of cumin), curried chickpea and carrot "hash" if you will...leftovers from Thursday's dinner, originally served over rice.

And yeah, the taters got a little dark in one spot. I got distracted by not wanting to burn the toast
