Yeah I had set of those copper 3G ones as well. They seemed pretty solid. Thanks all your input.Most of the time I've looked for new wheels, bike shops only have the generic one speed chinese (KT) hubs on steel wheels. I would find an older serviceable set of Worksman wheels to use. Alloy if possible. As for the hubs, a red band Bendix would be my first choice for a one speed coaster, but most are good if lubed and adjusted properly. I've used more than a few of those cheap chinese hubs and never had a problem after I've gone through them and made sure they were adjusted just right. On your heavier bikes, a 2 speed kickback may be a good choice, or even an automatic 2 speed like I use most of the time.
Also, the 57mm 3G wheels sold here will take a 2.125 tire and you can use them without modifying your frame that originally took a balloon tire. Here's my 53 Schwinn ballooner with those wheels:
