Florida is flat so single speed is fine and this is the bike I’ve been riding on the dirt roads and levees lately. I am still looking for a different stem/ handlebar combo.

I could definitely use either a new stem or a 1 1/8 quill to thread less converter, or shine to put a standard quill in there.
I really like the frame but that stem is stopping me from getting a good fit.
I also like that stem you showed with the cool bars wrapped and gripped!

My stem is a much older model that I got used. It was from 1993.

I just realized that I didn’t post A finished picture.
7 am last May at the start of a 76 mile ride. I rode one mile on gravel for each year old I was (I’m 74 so I exceeded my goal a little). I raised quite a bit of money for our high school class scholarship that we give to current grads. I organized it through our hs class facebook page. People were bumbed out because of the virus so I had a lot of classmates pledging and following. I finished at about 5 PM.
