Hoping you keep the rat-ina on the frame, I'd go middle stem as well. That seat should fit your vibe, if not your anatomy. 
Thing about BMX seats is, nobody hardly ever sat on them. Big boy BMX cruiser is a little different. But for showing the bike, and a brief ride video, it should work well!

Great build, all patina, throw in some BMX, sounds like fun to me.
I’m trying to find some crusty red comp III’s to more bmx’y
They still make the new Comp III tire. You could rub some 100% acrylic paint on them to 'age' them with the rest of the bike. That's what I did with my Desert Rat Columbia and the new tires I used on that build. I used a 'plaid' color, kind of a dirty gray. Maybe a faded red color, or even a cream color rubbed on the red Comp's would reduce the vibrancy and age the tire. Here's mine before, and after the application.
