My SA hub came with a 22 tooth cog, so I'm running 39/22 on 26 x 2.125 tires. That's pretty close to your gear ratios.
Your GI are 50 and 69. Mine are 46 and 63. Very similar to a standard 3 speed's 1st and 2nd gears.

See how easy that turned out to be. Looks like the pedals might be usable if you can get them out. Your brown rim wheels look terrific. I've used the newer 90mm front brake Sturmey hub and the brake was really good. Very powerful and progressive. I tried a 2 speed Sturmey hub for a couple of years and finally got tired of it changing gears every time I hit the brakes. I still use a newer 3 speed Sturmey hub with built in drum brake. A very good product and reliable. Your project looks great so far.What is the story of your bike if I may ask? How did a Dutch Gazelle end up in Canada?
