You can use stock spokes, the mongoose manual says to lace the rim and file down the excess spoke, I did this when I did a hub swap on my beast

I am so sorry I didn't keep up with this thread.
I am curious what it cost!
I do not recommend any shop that cannot build a wheel. No matter how nice!
Your quick release will be fine, I have run one with a big d.h. mtb. hydraulic disc set up for years, never an issue.
Do be careful with the tag a long. I have heard horror stories!
