I'd try a spacer behind the chainring and see what that does for your alignment
 
Another thought (and I am responding to video content) is to replace the freewheel with a ‘more modern’ version. I think the newer ones are more compact, which would mean I could use more spacers. Possibly?? And maybe get a better gear ratio?

Somewhere in the vastness that is YouTube I had saw someone that used a newer 8 speed + (?) cassette and only ran 5 or 6 of the gears and instead of installing the outer most small rings he instead stacked spacers on the backside to get the tire clearance he needed. If my description makes sense

Also after seeing @The Renaissance Man making a ducktail fender… I want one. I have a pile of old steel fenders. Can’t stop thinking about trying to modify them. I really need some metal working skills. Could I do it with a hammer and anvil?? I know that sounds crazy.

I'm really enjoying the evolution of this bike. I like the direction it is headed and the parts selection on it. The video updates are really cool. I may give that a try myself at some point. Nice work with the clear coat issue, that didn't look fixable to me. Bike's looking great!
 
@Pondo dont egg me on! I am having too much fun here and enjoy making videos. I just sent this to a friend that also builds bikes.

I need some help from you muscle bike banana seat guys. I really want to like this banana seat. And I’m close. But something just doesn’t look right. Is the sissy bar mounted wrong? Or is it the seatpost. I have the seatpost all the way down and the sissy bar all the way up. In other words I can’t make any up or down adjustments.

I'm confused........ aren't you building towards off road? That's what category you are entered in
 
The style of seat post might be throwing you off a bit. It looked a bit off with the banana seat to me at first but then it grew on me right away. I can see how having the sissy bar mounted to the axle could be annoying. I haven't had a banana seat bike since I was a kid but hopefully I'll be picking up my muscle project bike next week sometime. The ladybug is looking good!
 
Bike is looking great. I understand your unease about the sissy bar having to support all of the rider's weight. Might need some reinforcement.
