Yes, the Evans 'baseball bat' guard had me skeptical, but consider me a believer.
These are what I meant by sex bolts. It is what you use to squeeze the moon discs on the rim.
The jam nuts was bigger than I needed, so I settled for a washer on one side to give the needed clearance between the fork and the moon disc.

Loving the build so far. You picked the fork that I liked early on. Nice matching tank, love the seat. The moon disc is great.

As I expected with this wide wheelset, I ran into issues with the mooneyes. I even searched back in @marshall hudson 's Rollin Bones build a few years ago to refresh my memory of his moon disc issues.
You can see here that the rear disc has one that is flatter that the others. This is meant for the drive side. It 1/2" flatter than the other discs. That was the side that gave marshall issues.
The flatter one actually fit well on the drive side.
However, on the non drive side, the disc stuck out a good bit beyond the mounting for the coasterbrake arm.

I tested the discs on the skinnier 30mm (as opposed to the 40mm aerovane rims). The drive side was good, but the other side was still below where it needed to be for the coaster arm.
I'm afraid to try rims any narrower due to the thick bead on these fat tires.
Gonna head over to my stash to look for options.

This is the wheelset that zi found. I got these from @pvwacko back when he was moving from Jacksonville to the west coast. Similar to when @Wildcat moved from JAX, I was able to buy all of his leftover bike stuff.
The current Aerovane wheelset is 40mm wide. This wheelset is actually wider at 43mm. But I think the saving grace for my application is this has a nexus 3 speed hub which is wider than a standard coaster hub. That extra width looks like it will translate into clearance of the moon discs. We shall see.

Ran into the same issue when I made my hubcaps, last build. However, I was able to cut the hole a little wider and massage a dimple into the hubcap for clearance. Yours is quite a bit more challenging, as it's a smooth prefab.
First test on the new Jetset front wheel looks like I have good clearance. May possibly need a spacing washer like on the current front wheel. I guessing that I will replace the qr axle with a solid one.
On the drive side, the dust cap is about 7-8mm wider than the hole in the flatter moon disc. I don't have an issue with grinding out 4mm of the inner diameter of the disc because it will be covered by the sprocket anyway.
On the brake arm side it clears, but I will probably grind out a couple of 3-mm to make sure there is good clearance here as well. I don't want anything binding.

This is looking promising so far. I guess the next step is mounting up the tire and seeing if the wider rim and hub pose any clearance issues on the frame.

I'm actually pretty stoked about being able to use this wheel from Paul. It will be hidden by the moonies, but I love using parts from my RRB friends.

Man these look good on this Jetset rims. We'll see how they fit on the bike.
