It doesnt look that good from the pic, but it was yummy: light and very flavorful. Flour tortilla lightly charred on an open flame, olive oil, sauteed fresh garlic/scallions/tomatoes (lightly), stirred into beaten eggs with just a hint of crushed red pepper and covered. Oh, and cheese! Thats why you cant hardly see any of the other toppings.
A good day for a bike ride after weeks of rain, but I've been roped into a day at a waterfall up in the mountains. A big tray of Pancit won't last long.
